Brown Sugar Bourbon Marinade

Sweet, smoky, and a little boozy—this easy marinade makes steaks and pork chops irresistibly caramelized on the grill or in a skillet.

prep 5 min makes ~1 cup

Ingredients

  • ¼ cup bourbon
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 small garlic clove, finely grated
  • Freshly ground black pepper, to taste

Directions

  1. Whisk all ingredients in a bowl until the sugar dissolves.
  2. Add 1–2 lb steak or pork chops. Toss to coat and press out air.
  3. Marinate 4–12 hours in the fridge. Pat meat dry before cooking for best browning.
  4. Grill, pan-sear, or air-fry to desired doneness. Rest 5 minutes.

Tips

  • Add 1 tbsp soy sauce for extra savoriness; add ½ tsp chili flakes for heat.
  • Great on steak, pork chops, pork tenderloin, or mushrooms.
  • Storage: marinade keeps 5 days refrigerated (without meat). Do not reuse marinade that has touched raw meat unless boiled 3 minutes.
