Ingredients

  • 4 tbsp all-purpose flour
  • 2 tbsp brown sugar
  • 1/8 tsp baking powder
  • Pinch fine salt
  • 2 tbsp mashed very ripe banana
  • 3 tbsp milk
  • 1 tbsp neutral oil
  • 1/2 tsp vanilla extract
  • 1 tbsp chopped walnuts (optional)
Best banana: Speckled, very ripe bananas give the sweetest flavor and softest crumb.

Step-by-Step

  1. Mix dry. In a 12–14 oz microwave-safe mug, whisk flour, brown sugar, baking powder, and salt.
  2. Stir in wet. Add mashed banana, milk, oil, and vanilla; whisk until smooth.
  3. Fold. Stir in walnuts if using.
  4. Microwave. Cook on HIGH 70–80 seconds until just set but moist. Rest 1 minute and serve warm.
Serving idea: Top with a scoop of vanilla ice cream and an extra sprinkle of walnuts or a drizzle of Maple Pecan Syrup.
