Monster Eyeball Cake Pops

Start with a baked cake, roll into bites, then dip in bright candy coating and top with one giant candy eye. Party show-stopper!

Ingredients

  • 1 baked cake (9×13 in or two 8-inch layers), cooled
  • ⅓ cup frosting (buttercream or canned)
  • 2 cups candy melts or colored melting wafers (assorted colors)
  • Food coloring (only if using white melts)
  • Large candy eyeballs (24)
  • Lollipop sticks (24)
  • Optional: 1–2 tsp coconut oil or vegetable shortening to thin coating

Chocolate cake + chocolate frosting makes the easiest “dough.” If using a very moist cake, you may need less frosting.

Directions

  1. Crumble: In a large bowl, crumble the cooled cake into fine crumbs (no large pieces).
  2. Bind: Add ⅓ cup frosting and mix with clean hands until the crumbs hold together when squeezed. If dry, add 1–2 tsp more frosting; if sticky, add a spoonful of crumbs.
  3. Roll: Scoop 1 Tbsp portions, roll into smooth balls (~1¼ in). Place on a parchment-lined tray. Chill 20–30 minutes to firm.
  4. Stick & set: Melt 2–3 Tbsp of the candy melts. Dip the tip of each stick ¼ in into the melted candy, then insert halfway into a cake ball. Chill or freeze 10 minutes so sticks anchor.
  5. Melt for dipping: In a deep cup or measuring glass, melt remaining candy melts in 20-second bursts, stirring until smooth. If thick, stir in ½–1 tsp oil/shortening. Tint with food coloring if needed.
  6. Dip: Working with a few at a time, dip a cake pop straight down until fully coated. Lift and gently tap the stick on the cup’s rim while rotating to let excess drip off for a smooth finish.
  7. Eyeballs on: While still wet, press one candy eyeball onto the center. Stand pops upright in a foam block or a jar filled with sugar/sprinkles to set. Repeat with remaining colors.
  8. Set & store: Let stand until firm (10–15 minutes). Keep loosely covered at cool room temp up to 2 days or refrigerate up to 5 days.

Cracks after dipping usually mean the coating cooled too much—re-warm 5–10 seconds. If pops slide down the stick, chill the rolled balls a bit longer first.

  • Funfetti + vanilla with neon green coating.
  • Red velvet + cream cheese with purple coating.
  • Chocolate + peanut butter with orange coating.

Make-Ahead

  • Rolled, undipped cake balls freeze up to 2 months. Thaw in fridge, then dip.
  • Finished pops keep best in a cool, dry spot. Avoid humidity to prevent sticky coatings.
