Hands-on: 5 min Simmer: 12 min Yield: ~1¼ cups Diet: Gluten-Free Category: Coffee Syrup

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • ½ cup roasted chestnuts, finely chopped (jarred/vacuum-packed are great)
  • ½ tsp vanilla extract
  • Optional boosts: tiny pinch fine salt • ¼ tsp cinnamon • 1–2 tsp dark rum (or ⅛ tsp rum extract) stirred in off heat
Texture tip: Chop chestnuts very small so they release more flavor; strain through a fine sieve or a layer of cheesecloth for extra-smooth syrup.

Step-by-Step

  1. Simmer. Add water, sugar, and chopped chestnuts to a small saucepan. Bring to a gentle simmer and cook 12 minutes, stirring occasionally, until fragrant and slightly thickened.
  2. Strain & flavor. Remove from heat. Strain into a heat-safe bowl or measuring cup; press on solids. Stir in vanilla (and any optional boosts).
  3. Cool & bottle. Let cool completely; transfer to a clean bottle or jar. Syrup will thicken a bit as it chills.
Prevent crystallization: Add 1 tsp lemon juice or 1 Tbsp light corn syrup with the sugar to help keep the syrup glossy and pourable.

How to Use Chestnut Syrup

  • Chestnut Latte: 1–2 Tbsp syrup + 1–2 shots espresso + steamed milk; finish with a dusting of cinnamon.
  • Hot Chocolate: Stir 1–2 Tbsp into your favorite cocoa for a roasted-nut twist.
  • Iced Coffee/Cold Brew: Dissolve syrup in a splash of hot coffee, then add ice and milk.
  • Italian Soda: 2–3 Tbsp syrup + sparkling water over ice; add a splash of cream for an “Italian cream soda.”
  • Desserts: Drizzle on ice cream, pancakes, waffles, yogurt parfaits, bread pudding, or cheesecake.
  • Savory idea: Brush over roasted sweet potatoes or squash during the last few minutes for a glossy finish.

Variations & Pro Tips

  • Maple-Chestnut: Replace ¼ cup sugar with pure maple syrup; add after simmering.
  • Extra-Nutty: Stir in ½ tsp chestnut paste (crème de marrons) off heat for richness.
