Ingredients
- 1 cup water
- 1 cup granulated sugar
- ½ cup roasted chestnuts, finely chopped (jarred/vacuum-packed are great)
- ½ tsp vanilla extract
- Optional boosts: tiny pinch fine salt • ¼ tsp cinnamon • 1–2 tsp dark rum (or ⅛ tsp rum extract) stirred in off heat
Texture tip: Chop chestnuts very small so they release more flavor; strain through a fine sieve or a layer of cheesecloth for extra-smooth syrup.
Step-by-Step
- Simmer. Add water, sugar, and chopped chestnuts to a small saucepan. Bring to a gentle simmer and cook 12 minutes, stirring occasionally, until fragrant and slightly thickened.
- Strain & flavor. Remove from heat. Strain into a heat-safe bowl or measuring cup; press on solids. Stir in vanilla (and any optional boosts).
- Cool & bottle. Let cool completely; transfer to a clean bottle or jar. Syrup will thicken a bit as it chills.
Prevent crystallization: Add 1 tsp lemon juice or 1 Tbsp light corn syrup with the sugar to help keep the syrup glossy and pourable.
