Ingredients
- 1 cup water
- 1 cup granulated sugar
- ¼ cup unsweetened cocoa powder (natural or Dutch-process)
- ½ tsp coconut extract
- ½ tsp almond extract
- Optional boosts: pinch fine salt • 1 tsp vanilla extract • 1 Tbsp corn syrup (keeps syrup glossy and pourable)
Lump-free tip: Whisk the cocoa with a few tablespoons of the water into a smooth paste first, then add to the pan—no dry specks.
Step-by-Step
- Bloom cocoa. In a small saucepan, whisk cocoa with 2–3 Tbsp water until smooth. Add remaining water and sugar; whisk to combine.
- Simmer. Bring to a gentle simmer over medium heat and cook 5 minutes, stirring, until slightly thickened and sugar is fully dissolved.
- Flavor. Remove from heat; stir in coconut and almond extracts (and vanilla/salt if using).
- Cool & store. Let cool, then transfer to a clean bottle or jar. Syrup thickens a bit as it chills.
Drink ratios: Start with 1–2 Tbsp per 8–12 oz coffee or milk. For a mocha, add a shot of espresso and steamed milk; for iced drinks, dissolve in a splash of hot water first.
