Roasted Garlic Bacon Butter

Smoky, garlicky, and savory—this steakhouse-style compound butter melts into sizzling steaks, burgers, baked potatoes, or roasted veggies.

Ingredients

  • ½ cup (1 stick / 113 g) unsalted butter, softened
  • 2 cloves roasted garlic, mashed
  • 1–3 Tbsp finely crumbled cooked bacon
  • Freshly ground black pepper, to taste
  • Optional: Pinch of kosher salt (if butter is unsalted), 1 tsp finely chopped parsley, or a tiny pinch of smoked paprika.

Directions

  1. Mix. In a bowl, mash the softened butter with roasted garlic, bacon, and pepper until combined but still a little chunky.
  2. Shape. Spoon onto parchment or plastic wrap and roll into a tight log about 1½" thick; twist ends to seal.
  3. Chill. Refrigerate until firm, about 1 hour (or freeze 20–30 minutes to speed it up).
  4. Serve. Slice into coins and melt over hot steaks, burgers, baked potatoes, grilled corn, or roasted veggies.

Storage

Wrap the log in parchment, then foil or a zip-top bag. Refrigerate up to 5 days or freeze up to 3 months. Slice from frozen as needed.

Pro Tip

Roast garlic: Trim top of a garlic head, drizzle with oil, wrap in foil, and roast at 400°F (200°C) for 35–40 minutes until soft and sweet. Squeeze out cloves and mash.
