Garlic herb compound butter log sliced with fresh bread and parsley
Prep: 10 min Chill: 45–60 min Yield: 1 log (~8–10 coins)

Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • 1–2 cloves garlic, minced Roasted garlic = sweeter, milder
  • 1 Tbsp flat-leaf parsley, finely chopped
  • ½ tsp fresh thyme leaves (or ¼ tsp dried)
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper
  • Optional: ½ tsp finely grated lemon zest for brightness

Directions

  1. Mix. In a small bowl, mash the softened butter with garlic, parsley, thyme, salt, pepper (and lemon zest, if using) until evenly combined.
  2. Shape. Scrape onto a sheet of parchment or plastic wrap and roll into a tight log (about 1½" thick). Twist ends to seal.
  3. Chill. Refrigerate until firm, 45–60 minutes. For faster setting, freeze 20–30 minutes.
  4. Serve. Slice into coins and melt over hot steaks, seafood, baked potatoes, roasted veggies, or spread on warm bread.

Serving Ideas

Perfect on grilled ribeye, roast chicken, seared shrimp, sautéed mushrooms, garlic bread, and steamed green beans.

Roasted garlic tip: Roast a head of garlic at 400°F (200°C) for 35–40 minutes until soft and caramelized; squeeze out the cloves and mash. Use 2–3 roasted cloves in place of raw for a mellow flavor.

Storage

Wrap in parchment and place in a zip-top bag. Refrigerate up to 5 days or freeze up to 3 months. Slice directly from frozen as needed.
