Ingredients

Crust & Crumble

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 ½ cups old-fashioned oats

Fruit Filling

  • 2 cups chopped apples
  • 1 ½ cups fresh or frozen cranberries
  • ½ cup brown sugar
  • 2 tsp ground cinnamon

Optional glaze: ½ cup powdered sugar + 1–2 tsp milk + ¼ tsp vanilla; whisk and drizzle over cooled bars.

Juicy fruit? If your apples are very juicy, dust the fruit with 1–2 tsp cornstarch to help the bars slice cleanly.

Instructions

  1. Prep. Heat oven to 350°F (175°C). Line a 9×13" pan with parchment, leaving overhang for easy lift-out.
  2. Make crust. In a large bowl, mix melted butter and granulated sugar. Stir in flour and oats until combined and crumbly. Press about half firmly into the prepared pan.
  3. Make filling. In a bowl, combine apples, cranberries, brown sugar, and cinnamon. Spread evenly over the crust.
  4. Top. Sprinkle remaining oat mixture over the fruit, squeezing some into clumps.
  5. Bake. 35–40 minutes, until golden and bubbling at the edges. Cool completely in pan.
  6. Finish. Drizzle with optional glaze; lift out and cut into bars.

Storage: Keep covered at room temp up to 2 days, or refrigerate 4–5 days. Bars freeze well up to 2 months.
