Butternut Maple Dijon Dressing

Ingredients

  • 3 Tbsp apple cider vinegar (45 ml)
  • 1 Tbsp pure maple syrup (15 ml)
  • 1 tsp Dijon mustard
  • 1/4 cup extra-virgin olive oil (60 ml)
  • 1/8–1/4 tsp fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 tsp very finely minced shallot

Directions

  1. Base: In a jar or bowl, whisk vinegar, maple, Dijon, salt, and pepper until smooth.
  2. Emulsify: Slowly whisk in olive oil (or shake 20–30 seconds) until glossy and slightly thickened.
  3. Finish: Stir in shallot if using; taste and balance with a pinch of salt or a drop more maple.
Pairs with: Roasted butternut or delicata, Brussels sprouts, farro, pecans, cranberries, goat cheese.

Swaps & Variations

  • No maple? 2 tsp honey + 1 tsp water.
  • Citrus lift: Add 1 tsp lemon juice or zest.
  • Herby: 1 tsp chopped thyme or rosemary.

Greek Yogurt Apple Cider Dressing

Ingredients

  • 1/4 cup plain Greek yogurt
  • 2 Tbsp apple cider vinegar (30 ml)
  • 1 Tbsp honey (or maple syrup)
  • 2 Tbsp olive oil (30 ml)
  • 1/8–1/4 tsp fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 tsp Dijon for extra tang and stability
  • Optional: 1–2 Tbsp finely chopped dill, parsley, or chives

Directions

  1. Whisk: Combine yogurt, vinegar, honey, salt, and pepper (and Dijon if using) until smooth.
  2. Emulsify: Slowly whisk in olive oil until creamy and glossy.
  3. Herbs: Stir in fresh herbs; taste and adjust seasoning.
Serve with: Kale or cabbage salads, grain bowls, roasted carrots, chicken, or salmon.

Make It Yours

  • Lighter: Whisk in 1–2 tsp water to loosen.
  • Garlic-kissed: Add 1/4 small clove, microplaned.
  • Apple-forward: Replace 1 tsp vinegar with apple juice.

Storage

  • Maple Dijon: Refrigerate up to 7 days. Shake before serving; separation is natural.
  • Yogurt Apple Cider: Refrigerate up to 5 days. Stir before using.
